COLD NOODLE SALAD WITH MISO PEANUT DRESSING
Great for serving when company is over or as a side dish when serving a crowd for brunch. Use a high-quality smooth peanut butter for best results.
INGREDIENTS​

2 tbsp white miso
-
2 tbsp rice vinegar
-
2 tbsp canola oil
-
1 tbsp peanut butter
-
1 tbsp soy sauce
-
1 tsp sesame oil
-
1 tsp fish sauce
-
1 tsp garlic, mashed into paste
-
1 tsp ginger, mashed into paste
-
1/2 fresh lime, juiced
-
Sriracha, to taste
-
8 oz soba noodles
-
1/2 English cucumber, seeded and quartered
-
6 radishes, sliced thin
-
3 scallions, sliced thin
For garnish: -
1/2 tsp Kosher salt
-
1 tsp sesame seeds
-
Lime wedges
INSTRUCTIONS

Bring 6 cups of water to a boil, stir in soba noodles and cook until correct texture (al dente)

Drain noodles and run under cold till chill, drain well, and transfer to large bowl

Combine all ingredients (except vegetables) and whisk until smooth

Place dressing on top of noodles and fold into noodles until fully combined

Top with vegetables and season with kosher salt and sesame seeds

Serve with lime wedges. Enjoy!
