NOW SERVING: Ginger Lime Dressing

A versatile dressing that can be used with seafood or chicken and is great as a marinade or dressing.

Mint, basil and jalapeno relish

Another case where it's fine to use prepared garlic and ginger paste if you don't have fresh ingredients.

I recommend using Key Limes if you can find them but it's OK to substitute regular limes for them too. Key Limes will give you an elevated sense of flavor and have less tartness and more floral notes as compared to regular limes.


Ginger Lime Dressing


Ingredients

  • 2 tbsp garlic, minced into paste

  • 1/3 c ginger, minced

  • 2 tbsp Kosher salt

  • 1 tbsp black pepper, finely ground

  • 1/2 c rice wine vinegar

  • 1/4 c coconut aminos (or substitute low sodium soy sauce)

  • 3/4 c Key Lime juice

  • 3/4 c agave (or honey)

  • 1 c canola oil (or sub 1 part mild extra virgin olive oil 1 part vegetable oil)

Instructions


Blend all ingredients in dressing except oil.

Slowly pour in oil to emulsified.

Adjust seasoning and refrigerate.
