What to serve at that get-together that is tasty, beautiful and elevated? This wagu beef slider is the answer. Perfect for brunch and satisfying in it's flavors, this yummy bun-less slider pairs beautifully with crusty bread and a chilled pinot noir.
Serve this with a crusty bread on the side topped with tomato jam.
Wagu Slider with Poached Egg and Pickled Red Onion
A cast-iron pan works best but a stainless steel pan will also work. Try avoiding a non-stick pan because creating the sear will be more difficult.
Ingredients
1 lb wagu beef (see note below)
Kosher salt
Ghee
4 eggs
2 tbsp white vinegar
Pickled red onion (store-bought is OK)
1/8 c fresh chives, chopped
4 bibb lettuce pieces (for plating)
Sea salt
Instructions
Separate wagu beef into 4 equal parts, and make 4 burgers (approximately 1” high) Salt each burger very generously with Kosher salt and black pepper (on both sides) Leave burgers out of fridge for 45 minutes prior to cooking (must be room temperature)
Heat cast iron skillet on med/high, till pan is hot. Add burgers in pan, and sear on both sides for 2 minutes each (for medium rare). Take burgers off heat and put on plate and tent with tin foil, so burger can “rest.”
Add ghee, a dollop, a tablespoon or so. This is the indicator point. When it’s smoking that’s the sign to put the burgers in the pan.
Meanwhile, put water in pot and bring to simmer (this step should be done while burgers are cooking). Crack eggs into ramekins. When the water is simmering, add a splash of vinegar Drop each egg gently into center of pot with simmering water. Cook 3 minutes (get a timer people!) and then take egg out with slotted spoon and let drain on a kitchen towel (If you do one egg at a time, you can reheat all the eggs together for 30 seconds in the pot of simmering hot water).
Time to plate! Layer bibb lettuce on plate, add burger, then delicately place poached egg on top of burger Cut a small slice into yolk, so yolk covers a portion of the burger. Top with a dash of sea salt, red pickled onion and fresh chopped chives. Enjoy!
A Final Note
If you cannot find wagu beef you can use regular beef with one teaspoon of mayonnaise added to each burger patty to achieve the desired consistency.
