SWEET SESAME STEAK
This is great as a weeknight meal with friends or on the weekends with family and is one of my most-requested meals. My kids love it too which tells me it's a hit! Serve with sticky white rice or Jasmine rice in a pinch. Pairs well with a pinot noir or a chilled sake.
INGREDIENTS

1-2 lb skirt steak (or flank steak)

4 tbsp low sodium soy sauce

3 tbsp agave or honey
-
2 tbsp fish sauce
-
2 tbsp sweet chili sauce

2 tbsp sesame oil
-
1 tbsp ginger paste
-
1 tbsp garlic paste
-
4-5 scallions, sliced on diagonal

1/2 - 1 whole shallot, minced (optional)

1/4 tsp crushed red pepper flakes

Sriracha to taste
For garnish:

Fresh limes, quartered

Scallions, sliced on diagonal

Sea salt

Toasted sesame seeds
INSTRUCTIONS

Mix marinade and cover steak, minimum 2 hours. Make rice if using.

Pre-heat grill on high, turn to med-high (400 degrees) and grill steak 4 minutes per side (depending on thickness). If you don’t have a grill you can do it under the broiler or if you have no other option you can do it in pan, do it in a pan with a cover. Best bet then would be to start it in the pan to get caramelization and then finish it in the oven.

Take steak off heat when thermometer reaches 130, and cover with tented tin foil to rest meat (minimum of 10 minutes). The steak will reach 135. Put steak on attractive cutting board and slice against the grain (so steak does not get tough).

Once sliced, season steak with drizzle of lime juice and sprinkle of sea salt, scallions and sesame seeds over steak. Serve immediately with lime wedges on side. Enjoy!
A FINAL NOTE
Steaks are a great option for entertaining because they cook quickly and can take on a lot of flavor. Skirt steaks work well with this recipe but flank or hanger steaks are nice options too. Whenever you're selecting a steak look for marbling - this is fat and fat equals flavor! Tenting the meat after cooking is also very important. Cutting into meat too soon after cooking will make it loose it's juices! Tent it loosely with aluminum foil to let juices reabsorb resulting in a more flavorful dish.
